Overnight Blueberry French Toast With Blueberry Sauce

When I made this the comments I received from my mom and husband were that they were surprised it wasn’t as sweet as they thought it would be. My son however thought it should be sweeter so he poured additional maple syrup on top. Either way it is very good!

Overnight blueberry French toast is made with bread, blueberries, eggs, maple syrup and cream cheese. Ingredients
  • 12 slices day old white or Italian bread, crusts removed
  • 1 (8 oz. pkg.) Cream cheese, refrigerator cold
  • 1 cup fresh or frozen blueberries
  • 12 eggs
  • 2 cups milk
  • ⅓ cup maple syrup or honey

Blueberry Sauce:
  • 1 cup sugar
  • 2 Tablespoons cornstarch
  • 1 cup water
  • 1 cup fresh or frozen blueberries
  • 1 Tablespoon butter
  • 1 teaspoon vanilla extract
Instructions
  1. Cut bread into 1-inch cubes. Place half of the bread in a greased 9 inch x 13 inch glass baking dish.
  2. Cut cold cream cheese into ½-inch cubes; place over bread in baking dish.
  3. Top with blueberries and remaining bread.
  4. In a large mixing bowl, beat the eggs. Add milk and syrup. Mix well with a whisk.
  5. Pour over bread mixture. Cover and chill 8 hours or overnight.
  6. Remove from refrigerator 30 minutes before baking. Cover with aluminum foil and bake at 350 degrees for 30 minutes.
  7. Uncover; bake 30 minutes more or until golden brown and the center is set.

Blueberry Sauce:
  1. In a saucepan combine sugar and cornstarch; add water.
  2. Bring to a boil over medium heat; boil for 3 minutes, stirring constantly.
  3. Stir in blueberries; reduce heat. Simmer for 8-10 minutes or until blueberries have burst.
  4. Remove from heat and stir in butter and vanilla until melted.
  5. Ladle over pieces of the baked French toast.
Notes
If this recipe makes too much just cut the ingredients in half and use a 9" x 9" glass baking dish instead.

Serve any leftover blueberry sauce over waffles, pancakes, or ice cream.
