Bellini Cocktail Recipe

A Bellini cocktail recipe made with peach nectar, peach schnapps, and a dry sparkling wine. Serve this cocktail recipe as part of a special brunch menu or for a wedding or baby shower luncheon.

This drink is somewhat similar to a mimosa, but is a bit more elegant and the flavors are more subtle. It is a nice refreshing brunch drink to serve with foods like eggs, breakfast casseroles, pancakes, or waffles.

Traditionally an Italian or Spanish sparkling wine like Prosecco or Cava Brut is used for this cocktail, as they are not as sweet when combined with the peach nectar. A French champagne tends to be a bit sweeter and thus produces a sweeter drink.

For a non-alcoholic version, try substituting ginger ale in place of the sparkling wine and omitting the peach schnapps.

  • 1 part chilled peach nectar or white peach puree
  • 1 part peach schnapps
  • 4 parts Italian dry Sparkling wine or dry Champagne
  1. How to make a Bellini:
  2. Chill all ingredients ahead of time.
  3. When ready to serve, pour the peach nectar and peach schnapps into the bottom of each fluted champagne glass. Fill each glass with sparkling wine or dry champagne and serve to your guests.
