An easy taco casserole made with ground beef, black beans, salsa, and tortilla chips. Serve this for a one dish weeknight dinner.

Ingredients
1poundground hamburgerthawed
1Tablespoonolive oil
2teaspoonsred pepper flakes
1small onionchopped
2clovesgarlicminced
1package taco seasoning1.25 ounce
1/2cupwater
1 15-ouncecan black beans
1cupmild or medium salsa
1-1/2cupsshredded cheddar cheese
1/2large bag corn tortilla chipsI use Tostitos Scoops
Instructions
Preheat oven to 350 degrees.
Heat the olive oil in a non-stick skillet. Add the pepper flakes, onion, and garlic and sautee until the onion is softened.
Add the ground beef, taco seasoning, and water to the skillet. Break up the meat with a spatula and cook until the meat is browned.
Drain and rinse the black beans in a strainer. Add the beans and salsa to the mixture. Cook until everything thickens.
Line the bottom of a 9" x 13" glass baking dish with tortilla chips. Slightly crush them so there is a flat layer of chips covering the bottom of the dish and the pieces are bite size.
Spoon the meat mixture over the tortilla chips. Sprinkle with shredded cheddar cheese.
Bake for 20 minutes at 350 degrees or until the cheese melts.
Serve with sour cream, additional salsa on top, and chips on the side.
