2cupsflour
4teaspoonsbaking powder
1/2teaspoonsalt
2Tablespoonssugar
1-3/4cupmilk
2eggsbeaten
2Tablespoonsmelted butter
1cupmashed bananaabout 1-2 medium bananas
Instructions
Preheat griddle or frying pan.
In a medium mixing bowl, sift flour, baking powder, salt, and sugar together.
In a separate bowl, blend milk and eggs together. Add the melted butter.
Make a well in the center of the dry ingredients and pour the wet ingredients into the dry ingredients. Stir gently.
Fold in the mashed bananas just before frying.
Fry the banana pancakes on a hot griddle, until golden brown, turning once when small bubbles rise to the top.
