This tender crumb coffee cake is made with eggs, milk, butter, and sugar and has a sugar crumb crust. Serve for breakfast or brunch.

Ingredients
2cupsflour
2tsp.baking powder
1-1/2cupsgranulated sugar
1/2tsp.salt
3/4cupbutter
1tsp.vanilla
2eggs
3/4cupmilk
Instructions
Preheat oven to 325 degrees.
In a medium mixing bowl, mix together the flour, baking powder, sugar, salt and butter as for a pie crust with a pastry blender or fork. Save 1 cup of the crumbs for topping.
To the remaining mixture, add the vanilla, eggs, and milk and mix well.
Pour batter into an 8" x 8" square (greased and floured) baking pan. Sprinkle the reserved crumbs on top of the batter.
Bake for 50-65 minutes at 325 degrees until a toothpick inserted comes out clean.
Notes
Cut into 9 equal servings. Double the recipe for a 9" x 13" pan.
