Ingredients
2cupsflour
1-1/3Tablespoonsbaking powder
3/4teaspoonsalt
2Tablespoonssugar
1egg
1Cupmilk
1/4Cupmelted butter
Optional: 1 cup of any of the following: dried fruit such as raisinsdates, cherries, apricots or chocolate chips or chunks.
Instructions
Preheat oven to 350 degrees.
Sift dry ingredients in large bowl.
Beat egg until thick and add milk and butter, blend with beater.
Make a well in the flour mixture and add egg mixture all at once. Stir quickly, just until all flour is moistened.
(Optional) Fold in 1 cup of dried fruit, nuts or chips of your choice.
Fill muffin tins that have been lined with paper liners.
Bake for 20-25 minutes just until the center of the muffin springs up when you touch it.
