Ingredients
2cupssifted flour
2teaspoonsbaking powder
1/2teaspoonsalt
1teaspoonbaking soda
1/4cupshortening or melted butter
1eggbeaten
2-1/2cupsbuttermilk
Instructions
Preheat griddle or frying pan to medium heat.
In a medium sized mixing bowl, combine flour, baking powder, salt, and baking soda.
Blend in shortening or butter.
Add the beaten egg and fresh buttermilk and mix until smooth.
Fry on a hot griddle or frying pan.
Notes
Serves 4.You can also add 1/2 cup chocolate chips or 1/2 cup blueberries to the batter.Top with traditional favorites like maple syrup or strawberry syrup or get creative and top your pancakes with peanut butter and sliced bananas.
