Drain both cans of peaches and place in a medium mixing bowl. Add coffee liqueur and sugar. Allow to stand while mixing the remaining ingredients.
To make the batter: In a separate medium mixing bowl, add the flour, sugar, baking powder, salt, and cinnamon and mix together.
Add in a slightly beaten egg, vanilla, and melted butter. Mix the batter well.
Grease an 8-inch glass baking dish with a vegetable oil cooking spray.
Pour the fruit and syrup on the bottom of the dish.
Spoon the batter over the filling. It will spread during baking.
Bake at 375 degrees for 35-40 minutes until golden brown and the cake starts to pull away from the sides of the baking dish. Serve warm drizzled with heavy cream, ice cream, or topped with fresh whipped cream for an outstanding dessert or serve it as part of a brunch menu.
