An easy meringue topping for pies and more.

Serves: 2 cups
  • 1 Tablespoon cornstarch
  • 2 Tablespoons cold water
  • ½ cup. boiling water
  • 3 egg whites
  • 6 Tablespoons sugar
  • 1 teaspoon vanilla
  • pinch of salt
  1. Mix cornstarch with cold water. Add boiling water and cook until thickened. Let stand until cool.
  2. In a separate mixing bowl, beat egg whites until foamy. Gradually add sugar and beat until stiff.
  3. Turn mixer to low speed and add vanilla and salt. Gradually add cornstarch mixture, beat well.
  4. Spread over cool pie filling.
  5. Bake at 350 degrees for 10 minutes or golden brown.
