  • ¼ cup soft butter
  • ⅔ cup white sugar
  • 1 egg
  • ¼ cup sour cream
  • 2 large apples, peeled and grated
  • 1-3/4 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ cup pecans, chopped fine
  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9" x 5" x 3" loaf pan.
  3. In a medium bowl, mix together the butter and sugar.
  4. Add the egg, sour cream and grated apples.
  5. In a separate bowl, sift together the flour, baking soda, baking powder and cinnamon.
  6. Add the dry mixture to the wet mixture, stirring well.
  7. Stir in the finely chopped pecans.
  8. Bake for 50-60 minutes until a toothpick inserted comes out clean.
Serves 8-12.
