This tender crumb coffee cake is made with eggs, milk, butter, and sugar and has a sugar crumb crust. Serve for breakfast or brunch.

  • 2 cups flour
  • 2 tsp. baking powder
  • 1-1/2 cups granulated sugar
  • ½ tsp. salt
  • ¾ cup butter
  • 1 tsp. vanilla
  • 2 eggs
  • ¾ cup milk
  1. Preheat oven to 325 degrees.
  2. In a medium mixing bowl, mix together the flour, baking powder, sugar, salt and butter as for a pie crust with a pastry blender or fork. Save 1 cup of the crumbs for topping.
  3. To the remaining mixture, add the vanilla, eggs, and milk and mix well.
  4. Pour batter into an 8" x 8" square (greased and floured) baking pan. Sprinkle the reserved crumbs on top of the batter.
  5. Bake for 50-65 minutes at 325 degrees until a toothpick inserted comes out clean.
Cut into 9 equal servings. Double the recipe for a 9" x 13" pan.
