A quick and easy potato pancake recipe made from potatoes, onion, milk, and eggs. They are a savory dish that can be served as a side or the main course for brunch.

  • 3 cups peeled, diced raw potatoes
  • 1 small onion, quartered
  • ¼ cup milk
  • 2 eggs
  • 3 Tablespoons flour
  • 1 teaspoon salt
  • ¼ teaspoon baking powder
  1. Peel raw potatoes, rinse, and dice to about 1 inch square.
  2. Peel a small onion and cut it into quarters.
  3. Place all ingredients into a blender or food processor.
  4. Blend until all of the potatoes go through the blades, about 10 seconds. (Do not over-blend as potatoes will liquify.)
  5. Pour small amounts of the batter on a hot, greased griddle and fry until golden brown on both sides, turning once.
  6. Serve warm with butter and maple syrup or applesauce.
This recipe makes about 7-8 pancakes.
