This homemade pancake recipe is light and fluffy because it uses fresh buttermilk. Serve these pancakes for breakfast or brunch and top with real butter, pure maple syrup, or jams and preserves.

  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ cup shortening or melted butter
  • 1 egg, beaten
  • 2-1/2 cups buttermilk
  1. Preheat griddle or frying pan to medium heat.
  2. In a medium sized mixing bowl, combine flour, baking powder, salt, and baking soda.
  3. Blend in shortening or butter.
  4. Add the beaten egg and fresh buttermilk and mix until smooth.
  5. Fry on a hot griddle or frying pan.
Serves 4.

You can also add ½ cup chocolate chips or ½ cup blueberries to the batter.

Top with traditional favorites like maple syrup or strawberry syrup or get creative and top your pancakes with peanut butter and sliced bananas.
