Chilled Breakfast Fruit Compote

This chilled breakfast fruit compote is made with a generous mix of prunes, apples, raisins and oranges. Served chilled, this fruit recipe is a nice addition to add color and flavor to your breakfast or brunch table.

The warm bright inviting colors of the fruits are eye-catching and add that needed punch of color when you are serving a special brunch menu or just want something a bit different. A hint of cinnamon adds a deep rich flavor to the fruit juices.

A compote is a nice accompaniment to a breakfast casserole because of the tartness of the fruit and the sweetness from the sugar. The flavors complement each other and it helps round out the meal.

I know some of you might be wondering about a recipe that calls for prunes – knowing some of their less positive properties. 🙂 I thought I would take a moment and address some of the positive benefits of prunes.

Prunes are a nutrient dense food with antioxidant properties and they also contain high amounts of fiber. I do want to note that this recipe only calls for 1/2 cup of pitted prunes. When divided by 4 servings, that is a very small amount of prunes.

Ingredients

  • 3 large cooking apples peeled and sliced thick
  • 1/2 cup pitted prunes
  • 3/4 cup raisins
  • 1 orange peeled and sectioned
  • 3 cups water
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 2 Tablespoons cornstarch
  • 3 Tablespoons water

Instructions

  • In a saucepan, combine apples, prunes, raisins and orange. Add 3 cups of water.
  • Bring to a boil; reduce heat and simmer 10 minutes.
  • Stir in sugar and cinnamon.
  • Combine cornstarch and remaining 3 Tablespoons of water; stir into saucepan.
  • Bring to a boil, stirring constantly. Cook for 2 minutes.
  • Chill and serve.

Notes

This keeps well in the refrigerator for up to a week.
